Description

This lot includes 10 x 70cl bottlings:

 

  • Sheestown 1.1 – grown just outside the historic town of Kilkenny on an undulating, well-drained, lowland terroir predominantly derived from limestone, by Phil O’Brien, father of one of the distillery workers.

  • Ballykilvan 1.1 is one of the first releases from the Waterford Distillery's Single Farm Origin series. Made exclusively using Taberna barley grown by David Walsh-Kemmis on his Ballykilcavan farm in Co. Laois. After distillation, the whiskey is matured in a combination of French and American oak, and then bottled at 50% ABV

  • Bannow Island 1.1 is also one of the first releases from the Waterford Distillery's Single Farm Origin series. This single malt Irish whisky was distilled using a single vintage of Overture barley grown on the south coast of Co. Wexford by Ed Harpur on his Bannow Island farm.  Matured in French and American oak casks, and bottled at 50% ABV with no chill-filtration or additional colouring.

  • Ballymorgan 1.1 – grown by Robert Milne on one of Ireland’s premier malting barley terroirs – the famous Clonroche Series in Co. Wexford, with its loamy, clay soils derived from slate and granite.

     

  • Dunmore 1.1 - This Waterford’s Single Farm Origin release was produced with barley grown by John Tynan in County Laois, on a westerly-facing, lowland terroir by an ancient medieval fort. Matured in a spectrum of super-premium oak including first-fill and virgin US oak, Vin Doux Naturel – sweet fortified wines – and premium French oak. Released exclusively for the US market in October 2020. This is a 75cl bottling.
  • Hook Head 1.1 - This Waterford's Single Farm Origin Release was produced with barley grown by Martin Foley who grows barley on clay/loam soils derived from limestone, belonging to the Elton series. 
  • Lakefield 1.1 - This Waterford finds its Single Farm Origin in Lakefield Farm, west of Durrow Co. Laois. Farmed by Seamus Duggan who was the winner of the Waterford Barley Grower of the Year Trophy for his 2019 barley crop. 
  • Rathclogh 1.1 - Another one of Waterford’s Single Farm Origin releases, with barley grown by Richard Raftice on his low-lying, quick-drying, glacier meltwater gravel soils in Kilkenny. Matured in a spectrum of super-premium oak including first-fill and virgin US oak, Vin Doux Naturel – sweet fortified wines – and premium French oak. Released exclusively for the US market in October 2020. This is a 75cl bottling.

  • Gaia 1.1 -Gaia 1.1 Organic - Waterford Distillery has released Ireland’s very first organic whisky in the modern age. Organic Gaia 1.1 was distilled in 2016 from organic Irish barley grown by a small, dedicated band of organic farmers. The single malt whisky is certified by the Organic Trust. This whisky has been matured in a spectrum of fresh, super-premium oak: 42% first-fill US oak, 17% virgin US oak, 23% premium French oak and 18% Vin Doux Naturel – sweet fortified wine casks. It is bottled at 50% ABV without colouring, chill-filtration or any additives.
  • Micro Cuvee Lomhar - Waterford Micro Cuvée Lomhar is another very limited release from the Waterford Distillery. It was created to be a winter warmer dram - this is one of just 1,100 bottles produced - released in November 2020.
